We don’t really get a lot of leftover turkey after Thanksgiving. I’m fortunate enough to belong to a family that loves eating, where no one has any qualms about stuffing themselves to the gills whenever they’re presented with a feast. Still, whenever we do get some leftover turkey, we try to be creative about how we use it. One way we love using turkey leftovers is as filling for this cranberry turkey wellington.
Whenever I see this wellington on our dinner table, I feel like the meal is an extension of the holiday feast. This wellington is so festive, with cranberries and hazelnuts filling it, along with the turkey. It certainly beats the usual post-Thanksgiving turkey sandwich.
