Hot and Sour Soup: An Asian Meatless Monday Delight

Observing meatless Mondays can be tricky if you’re not really used to not eating meat. You probably won’t feel full despite your hearty vegetable-only dinner because your mind would be looking for the meat in your meal. One way you can trick your mind into thinking that you’ve eaten meat and make your transition to meatless Mondays a lot easier is by eating meaty dishes that really don’t have meat in them – like this hot and sour soup.

This Chinese soup is meaty and filling, but it doesn’t have any meat in it. The protein needed to trick your mind to thinking you’re having meat is supplied by mushrooms and tofu. It’s also a delicious and refreshing soup, full of flavor and with a hint of spice.
