I have a confession: I’m not much of a barbecue snob. I know that barbecue has many regional variations, and I’m aware that the debate as to which variation is best is fierce. But if someone serves me barbecued ribs, I’m not going to ask the person who gave it to me what kind of barbecue it is. I will simply eat it, gladly and gratefully. I do have another confession, though: I’m kind of partial to the Memphis-style ribs.
Memphis-style barbecue is a delight in itself. Unlike other styles, the Memphis barbecue style uses dry spice rub rather than barbecue sauce. It’s also not too sweet. I love how intense the spice rub makes the barbecued pork, and intense is just the way I like it.
